Uno de los programas estrella de la radio en Galicia, ‘Matinal Líder’ con Javier Sánchez de Dios en Radio Líder, se hacía eco este viernes del primer queso de camella de España que se elaboraba recientemente en Fuerteventura.
Guacimara Cabrera, gerente de la granja camellar de Oasis Wildlife Fuerteventura en el municipio de Puerto del Rosario, participaba esta mañana en directo en la veterana emisora gallega donde puso en valor este proyecto de gran importancia para «diversificación de la agricultura» en la isla majorera.
El veterano periodista Javier Sánchez de Dios inició la entrevista con un alegato cargado de cariño hacia la Islas Canarias, y más concretamente hacia La Palma.
Cabrera aprovechó su intervención para poner en valor este proyecto Made in Fuerteventura que en pocos meses se convertirá en la primera región de nuestro país en elaborar y vender este producto y otros derivados de la leche de camella, como yogures o cosméticos.
Buenas noticias para la «diversificación de la agricultura»
En este sentido, la directora gerente de Oasis Wildlife, Guacimara Cabrera, afirmaba recientemente que «nuestra idea inicial es rentabilizar la ganadería canaria y abrir la puerta a la industria láctea camellar en España». Para ello, «estamos ultimando la mejora en los sistemas de producción de leche dromedaria, así como el establecimiento de toda la reglamentación sanitaria relativa a la producción, implantación y explotación de estos productos innovadores en Europa», ha explicado Cabrera.
Junto a las pruebas internas de elaboración de queso y otros productos derivados, Oasis está ultimando los preparativos para la presentación de este proyecto de I+D+i para la conservación del camello canario, junto a otras empresas canarias de innovación y sostenibilidad tan pronto estén culminadas todas las fases de ejecución de la granja camellar majorera.

Propiedades y posibles beneficios
Procedente de la única raza de camello de Europa y autóctona de Canarias en peligro de extinción, sus propiedades y valor nutricional hacen de la leche de camella y de sus derivados, productos excepcionales.
La leche de camella destaca por ser un producto altamente digestible y con poco problemas alergénicos y, por lo tanto, recomendable para un parte importante de la población. Es de color blanco puro, con un sabor suave en comparación con la leche de oveja o cabra. Baja en grasas (4 %), rica en vitamina C (tres veces más que la leche de vaca) y sales minerales, sin lactosa. Esta leche consumida tradicionalmente por poblaciones nómadas desde Asia Central hasta Oriente Medio acumula cualidades nutricionales y digestivas. Mejor: la leche de camella es más sostenible que la leche de vaca o la leche vegetal porque requiere poca agua. Y si se produce en Fuerteventura, su huella de carbono es limitada.
Además, es la más parecida a la leche materna, es rica en omega 3 y contiene más sales totales, calcio libre, vitamina C y minerales como el hierro. Posee además un gran valor probiótico, pues contiene diversos microorganismos vivos que son beneficiosos, entre otras cosas, para la flora intestinal. Es rica en vitaminas del complejo B, incluso, podría convertirse en un complemento muy beneficioso para las personas con diabetes, ya que reduce los niveles de glucosa y contribuye a una mayor producción de insulina.
«Nunca podremos competir en cantidad con las vacas lecheras, pero aportamos un valor añadido. Nuestra leche es un alimento funcional», ha afirmado Cabrera.
El primer queso está hecho con la leche de camellos en peligro de extinción
Oasis Wildlife Fuerteventura, en línea con su compromiso con la protección y conservación de las especies, lleva muchos años trabajando en un proyecto de I+D+I sostenible con el Camello Canario. En este sentido, en 2015 comenzó a estudiar la viabilidad de mantener una granja camellar (Drome Milk Camel Farm), donde se pudiera apostar por la conservación de esta raza autóctona de la que tan solo quedan unos 1.200 ejemplares en el mundo.
A través de una granja piloto, situada en Oasis Wildlife Fuerteventura, comenzó diferentes estudios sobre las propiedades de la leche y la viabilidad económica de crear una industria láctea camellar en Canarias con una raza ganadera al borde de la extinción, consiguiendo así alzar su valor para despertar nuevamente interés en el camello canario.
Los camellos canarios -más específicamente, dromedarios- son una raza surgida del aislamiento en que han vivido durante los últimos seis siglos. Los trajeron los europeos a partir de 1405 con las primeras expediciones a las islas, procedentes del noroeste de África, y se consolidaron como animal de carga y para agricultura en Lanzarote y Fuerteventura, las dos islas más orientales. Las camellas canarias pesan unos 400 kilos, lejos de los 800 que puede alcanzar la misma especie en Oriente Próximo, y son de menor talla.
Una apuesta que se ha materializado en el estudio de las propiedades de la leche de camella, creando un futuro para la raza sostenible económicamente. En este sentido, está previsto que a finales del 2021 empiece a comercializarse aunque, todo apunta, a que puede ser antes.
Diversidad genética
En el mundo hay unos 20 millones de dromedarios, pero los poco más de mil ejemplares de Canarias «van justitos» en variabilidad genética y en supervivencia como población. «Con estos incentivos contribuimos a evitar su extinción», ha dicho Cabrera. La producción de leche de vaca a nivel mundial ronda las 665 millones de toneladas anuales, mientras que la de camella se limita a 2,91 millones, el 0,39%.
